Working with your wok
- To prepare a new wok, pour half a pint of oil into the wok and bring to a very high temperature, just before it begins to smoke. Allow it to cool and then pour out the oil and wipe the wok with a clean kitchen cloth.
- Always lightly grease the wok when stir-frying.
Use good quality oil. Vegetable or corn oil are best for stir-frying.
- Heat the oil to a high temperature before adding the food.
- Slice meat and vegetables thinly. A good width is the thickness of a chopstick.
- When you're cooking meat and vegetables, always add the vegetables first.
- When stir-frying rice or noodles, break an egg into the hot wok and lightly scramble before adding the rice or noodles. Mix the egg through. This prevents sticking.
- Dust chicken and pork strips with flour before stir-frying.
